how do you know that this snail is male? (usually my wife asks me how I know genders of animals - in German we have those, and my wife is from the US and claims there are no default genders in English)

You don't know. Traditionally it is not uncommon to use the masculine in English if gender is unknown, although nowadays that's obviously considered outdated and many people are careful to use inclusive language. However, when it comes to snails, I doubt they will be too offended. :)
